Darling’s Grapefruit Madeleines

Madeleines are tiny bite-sized French spongecakes perfect for a quick breakfast snack or afternoon tea. They also happen to be the French novelist Marcel Proust’s favorite pastry. After regularly visiting one of my favorite patisseries for their madeleines, I decided to finally create my own recipe!

While these cookies don’t appear in any otome games I’ve played so far, I think they deserve some recognition for how adorable (and delicious) they are!

These madeleines are insanely easy to bake, and you can have fresh cookies within two hours — not to mention you probably have all the ingredients already! And unlike recipes like macarons or genoise cake, madeleines are foul-proof, and you can have fresh cookies in as little as two hours!

SaltA large pinch or 1/4 teaspoon
White Caster Sugar100g
Grapefruit Jam/Marmelade/Korean Grapefruit Tea Jam2 Tablespoons
Baking Soda1/3 of a *1/2 teaspoon (Fill a 1/2 tsp 1/3)
All Purpose Flour110g
Unsalted Butter115g

Step 1: Put your stick of butter into a microwave-safe cup and melt it in the microwave for 1 minute. Afterward, place the melted butter into the fridge to cool it down.

Step 2: Crack your eggs into your mixer and pour in your sugar, salt, honey, and jam (whichever you decide to use).

Beat the mixture on high (level 10 on my KitchenAid) for approximately 2 minutes (5 minutes if you’re using an electric hand mixer) until everything is fully mixed and the batter is lightly frothy on top.

Step 3: Sift in your flour and baking soda and fold them into the batter until there are no more pockets of dry ingredients.

Step 4: Pour in your melted butter in three parts, making sure to incorporate the butter into the batter before pouring in more butter.

Step 5: Place the batter into the fridge for 30 minutes to an hour; this will let the batter fully incorporate and form the classic madeleine bump easier.

Out of the fridge and ready to be scooped!

Step 6: Grease your madeleine pan with butter, put a moderate scoop of the cooled batter into the mold, and bake for 7 to 10 minutes (depending on your oven) at 190C/375F degrees.

Step 7: Take them out of the oven, pop them onto a plate or rack to cool down, and they’re ready to be enjoyed!

I love having my madeleines with a cup of earl grey tea or juice; they’re the perfect snack to bring to class or work! And if you’re somebody who doesn’t have time to make breakfast, they’re a great grab-and-go treat before a hearty lunch!
