Darling’s Matcha Madeleines

I’m excited to announce that I’m starting a madeleine series! I’ve been developing custom madeleine flavors, and each one proves to be more delicious than the next! And now, I’m proud to share my matcha madeleine recipe with you all!

The technique is very similar to my grapefruit madeleine recipe, and once you master this one, nothing will stop you from making delicious madeleines in the future!

Matcha Powder10g for sifting, 2 teaspoons for the matcha butter
Baking Soda
1/3 of a *1/2 teaspoon (Fill a 1/2 tsp 1/3)

All Purpose Flour

Unsalted Butter
115g

Step 1: Put your stick of butter and 2 tsp of matcha powder into a microwave-safe cup and melt it in the microwave for 1 minute. Afterward, place the melted butter into the fridge to cool it down.

By microwaving the matcha with the butter, you help release the flavors into the butter, contributing to a deeper more nuanced flavor.

Step 2: Crack your eggs into your mixer along with the sugar and salt.

Beat the mixture on high (level 10 on my KitchenAid) for approximately 2 minutes (5 minutes if you’re using an electric hand mixer) until everything is fully mixed and the batter is lightly frothy on top.

Step 3: Sift in your flour, 10g of matcha powder, and baking soda and fold them into the batter until there are no more pockets of dry ingredients.

Step 4: Pour in your melted matcha butter in three parts, making sure to incorporate the butter into the batter before pouring in more butter.

Step 5: Place the batter into the fridge for 30 minutes to an hour; this will let the batter fully incorporate and form the classic madeleine bump easier.

Step 6: Grease your madeleine pan with butter, put a moderate scoop of the cooled batter into the mold, and bake for 7 to 10 minutes (depending on your oven) at 190C/375F degrees.

Step 7: Take them out of the oven, pop them onto a plate or rack to cool down, and they’re ready to be enjoyed!

Like my grapefruit madeleines, these are a great afternoon snack to bring with you while you go about your day!

Fun tip: I love to dip my madeleines into tea and let the flavors fully mix; try dipping these matcha madeleines into some green tea and let the flavors fully develop!
